If
the much-touted image of "rural Burgundy" has conjured up an image of
slightly backward and ramshackle rustic charm in your mind, you'll have
to do some adjusting when you encounter the slick prosperity of Dijon and the wine-producing country to the south, known as the Côte d'Or
. It may look peacefully pastoral, but there is nothing medieval about
the methods or the profits made in today's wine business. For any trace
of the older traditions you have to head into the southwestern corner
of the region, into the wine-producing regions of the Mâconnais and Beaujolais , and the cattle country of the Charollais .
